Mother’s Day Dinner Celebration
Sunday we celebrated the blessings that mothers are to us. Mother’s Day is a time when families get together and EAT! We find any reason to eat and on this day, we typically give our mother’s a break from the cooking. My family headed to the diner for breakfast and dinner was an at-home food celebration.
Making food choices for celebrations can be challenging. Who wants to feel as if they are on a restrictive plan for a celebration? I know I don’t. However, I also don’t want to wake up the next day with 1,000 extra calories to burn off. It takes deliberate thought and action to have something tasty and good for you.
At breakfast, I debated my selection forever. I made a decision and then changed it and did that again until finally I decided to have spinach pie and Greek salad. It would have been a completely great choice, if i didn’t eat all the extra fries from my sister’s plate. I’d rate my breakfast as an B-. Not to bad.
The family dinner was a little lobster fest. I take credit for the idea and give credit to everyone else for the execution. If you know me, my limited participation in preparation is expected. (BTW – I’m not in this picture, since I took the picture. The family is happily eating the very tasty meal. Everyone had some input. I did buy the ice cream and a low fat, low calorie and tasty kind.)
Lobster is delish! I know my mother loves lobster and remarkably good for us. The bad part of most lobster meals is the drawn butter. We didn’t have any liquid butter to drown our lobster. We really like lobster all on its own. In addition, to lobster we had corn, broccoli, salad and an apple crisp and ice cream desert.
When I commit myself to desert moderation, I will have a great meal every time. I was a little excessive this time. Fortunately, I bought lite ice cream with half the fat and fewer calories than the regular kind. These ice creams taste very good and if I didn’t point out that I made a healthy choice, I don’t know if anyone would have noticed.
Lobster nutritional value is around 140 calories per cup. At most, our 1 1/4 pound lobster had 2 cups of lobster meet which would translate into 280 calories of tasty seafood. An ear of corn has approximately 77 calories. A cup of broccoli is 30 calories. The salad had about 40 calories. I’ll add 30 calories for salad dressing and the pre-desert total is 457 calories. Not too bad for a day of celebration.
We served our bakes apple with sugar and cinnamon in small bowls to keep the calories around 150 calories. It is possible to have a great and healthy meal! It does take some thought and commitment. I’ll be working on coming up with other great recommendations.
